Gluten Free Apple Spice Waffles

Ingredients
  

  • For the Waffles:
  • 2 eggs
  • ½ cup coconut milk canned or carton, unsweetened
  • cup unsweetened applesauce
  • 1 tsp vanilla extract
  • 1 cup almond flour
  • ¼ cup coconut flour
  • ¼ cup tapioca flour
  • 3 tbsp coconut sugar
  • ¼ cup coconut oil melted
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp salt
  • For the Stewed Apples:
  • ¼ tbsp coconut oil
  • 1 cup apple diced (any variety works!)
  • 4 tbsp water
  • ½ tsp cinnamon
  • ½ tsp apple cider vinegar
  • 1 tbsp maple syrup

Method
 

  1. Make the stewed apples: In a small saucepan, melt coconut oil and combine diced apple, water, cinnamon, apple cider vinegar, and maple syrup.
  2. Simmer over medium-low heat for about 5–7 minutes, stirring occasionally, until the apples are soft and caramelized. Remove from heat and set aside.
  3. Prepare the waffle batter: In a medium bowl, whisk together eggs, coconut milk, applesauce, vanilla, and melted coconut oil.
  4. In a separate bowl, combine almond flour, coconut flour, tapioca flour, coconut sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  5. Pour the wet ingredients into the dry ingredients and mix until smooth. Let the batter sit for 3–5 minutes to thicken slightly.
  6. Cook the waffles: Preheat your waffle maker and lightly grease it with coconut oil.
  7. Spoon in enough batter to cover the waffle plates (amount depends on your waffle iron).
  8. Cook for 3–5 minutes, or until golden brown and crisp on the edges.
  9. Serve and enjoy: Top the warm waffles with a generous scoop of stewed apples. Drizzle with extra maple syrup or sprinkle with chopped nuts for an extra treat.
